Giant Steps, 2025 Halliday Winery of the Year, invites you to join them mid-vintage – when grapes are coming off the vineyards by the tonne and young wines are bubbling away in the winery. This year, they are bringing these baby wines to you in the middle of active ferment and pairing up with Four Pillars who will be mixing cocktails of fermenting wine and gin on the go. Ichi Ni Nana Fitzroy has also curated a thoughtful menu with fermented bits and pieces to match starting with oysters and plum wine vinaigrette and moving on to miso glazed kushiyaki, beef tataki and chuka wakame, finishing with a chef’s selection of nigiri and maki sushi.
